Jerk is a traditional Jamaican seasoning blend made from pimento (allspice), scotch bonnet pepper, and a combination of herbs and spices. Pimento, native to Jamaica, is the only spice indigenous to the “New World,” giving jerk its distinctive, bold flavour. Did You Know? Place marinated chicken wings on the grill. Cook for 40 minutes or until juices run clear when pierced with a fork. Baste with oil and lemon/lime juice glaze just before finishing for extra moisture. Oven: Preheat oven to 215°C. Arrange chicken wings on a greased baking tray. Bake uncovered for 20 minutes. Reduce oven temperature to 180°C. Turn chicken wings: For Jerk Chicken: Bake for an additional 12 minutes, then baste with oil and lemon/lime juice mix and bake for 5 more minutes. For BBQ Chicken: Bake for an additional 18 minutes. Let rest for 5 minutes before serving.
