Jamaican Curry Chicken Recipe  Cooking time: 40 minutes Servings: 6 Ingredients: 1½ kg chicken – cut into 10 to 15 pieces 1 tbsp vegetable oil 6 tbsp Spur Tree Curry Seasoning (use 8 tbsp for goat, lamb or mutton ) 1 large potato – diced. Method: Marinate chicken with 5 tbsp of Curry Seasoning, ensuring all pieces are well coated.  Refrigerate for at least 2 hours or overnight. In a pan, heat oil and sauté 1 tbsp of Curry Seasoning for 2 minutes over medium heat. Add chicken and brown for 5 – 8 minutes, turning frequently. Reduce heat, cover and simmer for 20 minutes. Add a little water if necessary. Add potatoes and continue cooking until potatoes are tender and the sauce thickens. Ingredients: Scallion, water, 5% cane vinegar, onion, minced garlic, curry powder (turmeric, fenugreek, coriander, cumin, black pepper, pimento, star anise), salt, scotch bonnet/hot red pepper, thyme, turmeric, xanthan gum, sucrose, yeast extract, sodium benzoate (preservative <0.1%), sodium metabisulphite (0.05%)
