For a recipe of oven-baked jerk chicken, visit: Jerk or BBQ Seasoned Chicken Wings.   Recipe: Jerk Pork Ingredients: 2kg pork shoulder (ask the butcher to chop through the bone while keeping it in one piece) 5 tbsp Jerk Seasoning Paste (adjust to taste) ¼ cup chopped onions ½ cup oil 1 cup water Instructions: Marinate: Wipe pork, then rub jerk seasoning and onions well into the meat. Cover and refrigerate overnight. Sear: Scrape off excess seasoning. Heat oil in a heavy-bottomed pot. Fry pork for 6 minutes on each side. Cook: Add water, cover, and simmer for 1½ to 2 hours, turning occasionally. Finish: Chop meat into pieces and bake at 200°C for 10 minutes to dry out before serving.
